Home canning preserves food in glass Mason jars by heating contents to kill microbes and creating a vacuum seal. Use water bath canning for high-acid foods (fruits, jams, pickles, tomatoes) and pressure canning for low-acid foods (meats, vegetables, soups). Always follow tested, modern recipes from the National Center for Home Food Preservation to ensure safety.Essential EquipmentGlass Mason jars and new flat lids (rings/bands can be reused if rust-free)Boiling water bath canner (or a large deep stockpot with a rack) or a pressure cannerJar lifter tongs, a wide-mouth canning funnel, and a bubble remover/measuring toolClean damp cloth or paper towel with a bit of white vinegar.Step-by-Step InstructionsPrep and Clean: Wash your jars in hot soapy water and keep them warm. Inspect the rims for any chips or cracks.Fill Jars: Pack your prepared hot or cold food into the jars using a funnel. Leave the specific "headspace" (empty room between the food and the jar rim, usually 1/4 inch to 1 inch) required by your tested recipe.Remove Air: Run a non-metallic bubble remover tool down the inside of the jar to release trapped air pockets.Wipe Rims: Wipe the rim and threads clean with a damp paper towel dipped in vinegar to remove any grease or food residue that could block a tight seal.Apply Lids: Place a fresh flat lid on the jar and screw the metal ring down until it is fingertip-tight (do not over-tighten).Process: Lower the jars into your water bath or pressure canner following the precise time, temperature, and elevation adjustments listed in your trusted recipe. Remove the jars carefully using jar lifters and let them sit undisturbed on a towel for 12 to 24 hours. Press the center of the lid; if it does not flex or pop, a successful vacuum seal has formed.
